Mashed Potato Pancake Recipes

 Ingredients List

  • Potatoes (mashed), 1 cup
  • Egg (lightly beaten), 1
  • Garlic (minced), ¼ tsp.
  • Ginger (chopped), ¼ tsp.
  • Italian seasoning, ½ tsp.
  • Vegetable oil, 1 tbsp.
  • Baking potatoes, 3
  • Garlic cloves (minced), 2
  • Ground black pepper, ½ tsp.
  • Fresh parsley (chopped), ½ tsp.
  • Fresh rosemary (chopped), ½ tsp.
  • Milk, 1 cup
  • Salt, to taste
  • Butter, 6 tbsp.
  • Baking potatoes (peeled; chopped), 1½ lb
  • Sour cream, ½ cup
  • Butter, 1½ tbsp.
  • Parmesan cheese (grated), 2 tbsp.
  • Garlic cloves, 2
  • Fresh thyme (chopped), ½ tsp.
  • Fresh sage (chopped), ½ tsp.
  • Fresh mint (chopped), ½ tsp.
  • Chives (chopped), 1 tbsp.
  • Dried red chillies (crushed), ¼ tsp.
  • Salt, to taste
  • Potatoes (mashed), 1 cup
  • Sausage (finely chopped), ½ cup
  • Onion (chopped), 2 tbsp.
  • Milk, ½ cup
  • Butter, 2 tbsp.
  • Salt and pepper, to taste

 Directions

----Mashed Potato and Ginger-garlic Pancake-----

1. Mix the mashed potatoes with the ginger, garlic, seasoning, and eggs in a bowl.

2. In a heavy skillet, heat the oil. Meanwhile, make golf ball-sized balls of the mashed mixture, place them in the skillet, and flatten them evenly with a spatula.

3. Let the pancakes turn brown and crispy on both the sides, and serve hot with a sauce of your choice.

Pancake with Herbs and Mashed Potato

1. Peel and slice the potatoes; boil them in a large saucepan until they turn tender. Drain the water and mash the potatoes, making sure no pieces are left.

2. Heat the butter in a skillet and sauté the garlic in it until it turns pink. Set the skillet aside, and let it cool down.

3. Add the milk to the potatoes until you get the right consistency for the pancakes. Stir in the butter and garlic along with the seasoning.

4. Put the skillet back over medium heat, and using a ladle, drop spoonfuls of the batter into it and make the crispy pancakes.

Baked Pancakes

1. In the 3-quart pot, cover the potatoes and garlic with water, add some salt to it, and bring the mixture to a boil. Reduce the heat to medium and cook until the potatoes turn tender and then drain them.

2. Spoon in the butter, sour cream, and Parmesan cheese along with the chopped herbs.

3. Spread the mixture in a prepared baking dish, sprinkle it with the dried red chillies, and bake it in a 350° F preheated oven until it turns golden brown and crispy. Serve hot.

Pancakes with Sausage and Mashed Potato

1. Mix all the ingredients together, except the milk. Then, add enough milk to get the desired consistency for making the pancakes.

2. Heat some oil in a skillet, drop a ladle of the prepared mixture in it, and flatten it with a spatula. Cook until it turns brown and crispy on both the sides. Serve hot.
