Mashed Potatoes Cheeseburger Meatloaf

  • 1.5 pounds ground beef
  • 2.5 pounds potatoes
  • 4 oz cheddar cheese
  • 4 oz Pepperjack cheese
  • 2 eggs
  • 1 cup bread crumbs
  • 3 tbs milk
  • 4 oz shredded cheddar
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbs Oregano
  • ¼ cup milk
  • 2 tbs butter
  • 1 cup water

 Directions

Dice potatoes and place in the Instant pot with 1 cup water. In a bowl mix together ground beef , eggs, breadcrumbs, 3 tbs milk, and seasonings. Mix in 4 oz of shredded cheddar. Place on waxed paper and spread out. Cut your cheddar cheese and pepper jack cheese lengthwise place in the center of your meat mixture. Roll meat so the cheese is in the center. Mine ended up being too long I had to make two smaller ones side by side. Place on aluminum foil Creating a little bowl with your foil like in the image above. Place right on top of the potatoes. Put your pot on manual high pressure for 35 minutes. Do a quick release. Remove the foil with the meat loaf. Mash your potatoes add ¼ cup milk and 2 tbs butter mash till creamy and smooth. Serve! I hope you enjoy this as much as we did.
