Matchstick Parsnips and Carrots

 Ingredients List

  • 1 1/2 c Water
  • 1 1/2 tb Margarine
  • 1 tb Sugar
  • 1 tb Lemon juice
  • 3/4 ts Salt
  • 6 c Julienne-cut parsnips,
  • -(2-inch) (3/4 pound)
  • 6 c Julienne-cut carrots,
  • -(2-inch) (1 pound)
  • 1/3 c Chopped fresh parsley

 Directions

Combine first 5 ingredients in a Dutch oven; stir well. Add parsnips and
carrots; toss well. Place over medium heat; cover and cook 10 minutes.
Uncover and cook an additional 10 minutes. Yield: 6 servings (serving size:
1 cup).

Carbohydrate; 0mg Cholesterol; 388mg Sodium

Serving Ideas : Spoon into a serving bowl; sprinkle with parsley.
