Maui Fish Tacos

Ingredients List
- 1 8 oz can whole or crushed pineapple
- juice from 1 lime (or approx. 1/2 cup lime juice)
- 1 tablespoon salt
- 1 tablespoon fresh oregano, chopped
- 6 garlic cloves, chopped
- 1 teaspoon fresh ground pepper
- 1 pound fresh fish, preferably Mahi Mahi (tuna or cod can also be used)
- 8 (6-inch) tortillas, warmed up
- 1 tablespoon chopped cilantro
- 2 tablespoons chopped yellow onion
- salsa
Directions
Open the can of pineapple and separate the fruit from the juice.
Mix the lime juice, pineapple juice, salt, oregano, garlic and pepper together.
Pour the lime-pineapple juice mixture over the Mahi Mahi and let it marinate for approximately 2 hours.
Remove the Mahi Mahi from the marinade. Grill or saute the fish. Once done, take it out of the grill and cut it into 1/4-inch cubes.
Place the fish in the tortillas and garnish with the canned pineapple fruit (chopped), cilantro, onion and salsa.
Serve warm with a slice of lime.
