Mediterranean Stew

 Ingredients List

  • 1 md Eggplant; chopped
  • 2 md Zucchini; chopped
  • 1 Green pepper; chopped
  • 1 Onion; chopped
  • 3 Tomatoes; chopped
  • 30 oz Garbanzo beans; rinsed and
  • -drained
  • 9 oz Frozen artichokes; quartered
  • 1 tb Oregano
  • Fresh ground pepper
  • Salt; to taste
  • Red pepper flakes; to taste


Combine in pot and cook until hated through and zucchini is tender. Serve
with rice, noodles or couscous.
