Mexicali Chicken

Ingredients List
- 1 2-1/2 -3Lb Broiler-Fryer
- -Chicken, Cut Up
- 2 tb Butter
- 1/2 c Onion, Chopped
- 1 Clove Garlic, Medium, Minced
- 1 8 Oz Can Tomato Sauce
- 3/4 c Chicken Broth
- 1 tb Vinegar
- 1/4 ts Chili Powder
- 1/2 c Light Raisins
- 1/2 c Pimento-Stuffed Green
- -Olives, Sliced
- 1 Green Pepper, Cut In Strips
Directions
In skillet, brown chicken in butter; remove chicken. Add onion & garlic to
skillet; cook till lightly browned. Add dash salt & remaining ingredients
except green pepper. Return chicken to skillet; spoon sauce over all.
Cover; simmer 30 minutes. Add green pepper; cover and cook 10 minutes more.
Serve with rice.
NOTES : I usually add more chili powder to this recipe. A dish I've been
making for years and everyone loves it!
