Mexican Chicken #2

 Ingredients List

  • 6 Chicken breasts
  • 1/4 c Corn oil
  • 1/3 c Minced onions
  • 1 1/2 ts Chopped green pepper
  • 1/2 c Fresh mushrooms
  • 1 Tomato; chopped
  • 1/2 c Tomato juice
  • 3/4 c Grated low-fat cheese


Boil & debone chicken. Chop meat into bite size pieces & saute in corn oil,
adding onions, green pepper & mushrooms. Pour into casserole & add tomato &
juice. Mix thoroughly. Cover with cheese & bake at 325 for 25 minutes.
