Mexican Lasagna Rollups

 Ingredients List

  • 1lb of Ground Chicken Breast
  • 1 8oz block of cream cheese (I used Neufchatel Cheese as it”™s lower in calories)
  • 1 can of Rotel
  • 1 small can of Tomato Sauce
  • Chili Powder
  • Garlic Powder
  • S&P
  • Onion
  • Salsa
  • 1 lb box of Lasagna Noodles
  • 6 oz of Cheddar Cheese


First thing boil your noodles according to package, drain, and set aside to cool so you can handle them.

In a pan put chicken and onion in, cook thoroughly.

Add spices according to your taste

Add in Rotel and tomato sauce and cook for awhile”¦taste and season if needed

Once this is cooked down a little bit and tastes good add in the block of cream cheese.

Stir it in to melt it through and set the mixture aside to cool a bit so you can handle it by rolling it into the lasagna strips.
In a 9×13 cake pan put enough salsa in the bottom to cover it so the noodles don”™t stick.

Preheat oven to 375 at this point.

Take 1 noodle at a time and spoon mixture onto a lasagna strip, then roll it up.

Once pan is full spoon any leftover mixture over the top of rollups.

Top with cheddar cheese.

Bake in oven until heated through and cheese is melted”¦it was about 15-20 min

Serve with sour cream and or salsa if you want.
