Mexican Pepper chicken soup

Ingredients List
- 1 lb boneless skinless chicken (2-3 large breasts)
- 1 32 oz container chicken broth
- 2 (14.5 oz) cans diced tomatoes
- 1 1/2 cup chopped carrots
- 1 1/2 cup chopped celery
- 1 cup chooped onion
- 1 cup chopped red bell pepper
- 1 cup chopped cilantro
- 1 1/2 cup water
- 1/4 cup tomato paste
- 2 tsp minced garlic
- 1 tsp kosher salt
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 lime juiced
Directions
1. Combine all ingredients in a crock pot and cook on high for 3-4 hours or low for 6-8.
2. Cook until the chicken shreds easily and the vegetables are tender.
3. Shred chicken and serve immediately.
