 Ingredients List

  • Onions
  • 1 lb Ground beef
  • Cumin
  • Salt & pepper to taste
  • Rosemary
  • Thyme
  • Green chiles; roasted,
  • -chopped & diced
  • 1 Chopped tomato; fresh or can
  • 1/2 c American or Monterey Jack
  • -cheese
  • Mexican rolls; toast or
  • -hominy

 Directions

Start with onions....as many as you like. Chop & saute onions in butter or
bacon fat. Add ground beef & spices to taste. Cook until meat is done. Add
chiles, tomatoes & cheese & cook until cheese melts & mixture thickens.
Serve on toast, rolls or hominy. The hominy may be added along with the
chiles & tomatoes.
