Mexican-Style Meat Loaf

 Ingredients List

  • No-stick corn oil cooking
  • Spray
  • 1 lb Extra-lean ground turkey
  • 3/4 lb Ground beef sirloin
  • 2 Green onions, chopped
  • 3/4 ts Salt
  • 3/4 ts Ground cumin
  • 1/2 ts Dried marjoram or oregano
  • 1/4 ts Freshly ground black pepper
  • 1 c Fresh bread crumbs
  • 7 oz Jar sweet roasted red pepper
  • Drained and chopped
  • 1 Egg white
  • 1/2 c Canned black beans, drained


Heat oven to 350 degrees. Lightly coat an 8x5x3 inch loaf baking pan with
no-stick corn oil cooking spray; set aside. In a large bowl, combine the
extra-lean ground turkey, ground sirloin, green onions, salt, cumin,
marjoram or oregano, black pepper, bread crumbs, red pepper, egg white and
black beans. Mix with your hands or a sturdy spatula to thoroughly combine
all ingredients. Pack into prepared pan and bake 45 minutes. Remove from
heat and allow to rest 5 minutes before slicing. Cut into 1 inch slices.
