Ingredients List
- 1 lb Kumquats (about 3 1/2 cups)
- 1 1/2 c Sugar
Directions
1) Rinse kumquats and cut into 1/8" slices; discard seeds and end pieces.
Chop fruit very coarsly.
2) Mix fruit with sugar in a 2-1/2 to 3 quart nonmetal bowl.
3) Microwave, uncovered, on high until mixture begins to boil, about 6
minutes; stir down bubbles.
4) Continue to cook, stirring every 2 to 3 minutes, until fruit mixture is
thick enough to spread, about 10 minutes. Jam will thicken slightly as it
cools. Serve warm or cool; to store, cover and chill up to 2 months. Makes
about 2 cups.
