Minestrone in Minutes

 Ingredients List

  • 1/2 c Water
  • 1 c Onion; Chopped
  • 16 oz Tomatoes, Canned; Chopped
  • 2 sm Zucchini; Cubed
  • 3 Low Sodium Beef Broth;
  • -Vegetarian Kind
  • 3 c Water
  • 2 c Cabbage; Finely Chopped
  • 15 oz Great Northern Beans;
  • -Undrained
  • 1 ts Dried Basil
  • 2 tb Fresh Parsley; Chopped


In a Dutch oven or soup kettle, saute onion in 1/2 C water for 5 minutes.

Add all remaining ingredients.

Simmer 1 hour.

Prep Time: 20 minutes Cooking Time: 1 hr 5 min Servings: 8 - 10

This was very good. I added some salt but it probably didn't need any
additional for "normal" people...but salt is a food group for me.
