Mini Pecan Tarts

 Ingredients List

  • Basic Pastry (see below)
  • 3 large eggs
  • ½ cup dark brown sugar
  • ½ cup white sugar
  • ¾ cup light corn syrup
  • 2 tablespoons melted butter
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • 2 cups chopped pecans


In a glass bowl, microwave the butter for about 30 seconds or until melted.
Add all ingredients, except pecans, and mix well.
Stir in pecans.
Pour filling into prepared tart molds. If desired, use a cookie cutter to cut out shapes to top each tart.
Bake at 350 F for 25 – 30 minutes or until set.
Transfer tarts to cooling rack.
Once cool, remove tarts from tart molds
