Mint Carrot Pineapple Salad

Ingredients List
- 4 md Carrots; Shredded, About 2
- -Cups
- 3/4 c Pineapple; Finely Chopped
- 1/3 c Fat Free Plain Yogurt
- 2 tb Fresh Mint Leaves; Chopped
- 2 tb Lemon Juice
- 1 ts Honey
- 1/2 ts Ground Cinnamon
- 1/4 ts Ground Cumin
- 3 c Leaf Lettuce; Torn Into Bite
- -Sized Pieces, About 1/2
- -Large Head
Directions
Mix all of the ingredients except the lettuce in a glass or plastic bowl,
blending well. Cover and refrigerate about 2 hours or until well chilled.
Serve on the lettuce.
