Mint Carrot Pineapple Salad

 Ingredients List

  • 4 md Carrots; Shredded, About 2
  • -Cups
  • 3/4 c Pineapple; Finely Chopped
  • 1/3 c Fat Free Plain Yogurt
  • 2 tb Fresh Mint Leaves; Chopped
  • 2 tb Lemon Juice
  • 1 ts Honey
  • 1/2 ts Ground Cinnamon
  • 1/4 ts Ground Cumin
  • 3 c Leaf Lettuce; Torn Into Bite
  • -Sized Pieces, About 1/2
  • -Large Head

 Directions

Mix all of the ingredients except the lettuce in a glass or plastic bowl,
blending well. Cover and refrigerate about 2 hours or until well chilled.
Serve on the lettuce.
