Mint Cheesecake Bars

Ingredients List
- for the crust:
- 14 Oreos regular
- 2 Tablespoons unsalted butter melted
- for the filling:
- 2 8 oz . pkgs cream cheese softened
- 1 cup granulated sugar
- 4 Tablespoons sour cream
- 4 Tablespoons all-purpose flour
- 1/2 teaspoon pure vanilla extract
- 3/4 teaspoon peppermint extract
- 2 large eggs
- green food coloring optional
Directions
Preheat oven to 350 degrees F.
Line an 8" square baking pan (greased) with parchment paper. Set aside.
To make the crust:
Place Oreos in food processor (a small one works just fine) and blend until fine. Add melted butter and blend until it comes together.
Press the Oreo crust mixture into the bottom of the pan.
Bake crust for 10 minutes.
In the meantime, make filling:
In a large mixing bowl, beat cream cheese with an electric mixer for 30 seconds, until creamy.
Add sugar and mix in well.
Add sour cream, flour and both extracts. Mix in well.
Add eggs and mix in well.
Add food coloring if desired and mix in.
Pour filling over crust. Tap the pan against the counter to release any air bubbles.
Bake cheesecake bars for 33 to 35 minutes.
Remove from the oven and cool in pan completely.
Remove from pan and chill in fridge for at least 2 hours, preferably overnight.
Slice and serve.
