Minted Pasta Salad

 Ingredients List

  • 2 c Small pasta shapes, such as
  • Orzo, tiny shells or ziti
  • Salt
  • 1/3 c Light olive oil
  • 2 tb Red wine vinegar
  • 1/2 c Fresh mint leaves, chopped
  • 1 ts Fresh oregano leaves,
  • Chopped
  • 2 Cloves garlic, minced
  • Freshly ground pepper to
  • Taste

 Directions

Cook pasta in boiling salted water according to pack directions until
al dente; drain well. Mix oil, vinegar, herbs, garlic, salt & pepper
in a serving bowl. Add pasta & toss gently. Serve warm or at room
temperature.
