- Red beans
- Fresh cut corn kernels
- Butter
- Salt
- Pepper

Directions
This is another gift from the Indians, a gift we now call succotash. In
the early days, however, red beans were used rather than lima beans. Soak
and cook the beans first, drain them, and place them in a casserole with
fresh-cut corn kernels (or frozen), a bit of butter, salt, and pepper, and
a very small amount of water. Cover and simmer on the top of the stove for
a few minutes, until the corn is tender.
In the old days this dish was made with bear grease rather than butter.
If you are out of butter or bear grease, try olive oil. It is very good!
