Mixed Fruit Squares

 Ingredients List

  • 1 pk (8-oz) dried mixed fruit;
  • -finely chopped
  • 1/4 c Dark raisins
  • 1 1/4 c Water
  • 8 tb Margarine; cut into pieces
  • 2 Eggs
  • 1 ts Vanilla
  • 1 c All-purpose flour
  • 5 1/2 ts Equal "Measure" -or-
  • 18 Packets Equal sweetener
  • 1 ts Baking soda
  • 1/4 ts Salt
  • 3/4 ts Ground cinnamon
  • 1/2 ts Ground ginger
  • 1/4 ts Ground nutmeg
  • 1/4 c Chopped walnuts


Combine dried fruit, raisins and water in medium saucepan; heat to
boiling. Reduce heat and simmer, uncovered, until fruit is tender and water
is absorbed, about 10 minutes. Remove from heat and add margarine, stirring
until melted; cool to room temperature.

Mix eggs and vanilla into fruit mixture; mix in combined flour, Equal
Measure, baking soda, salt and spices. Spread batter evenly in greased
baking dish, 11x7x2-inches; sprinkle with walnuts.

Bake in preheated 350ø oven until cake springs back when touched lightly,
30-35 minutes. Cool on wire rack; cut into 1-inch squares.

Makes approx. 2 dozen, 18% calorie reduction from traditional recipe. Per
square: 99 calories, 13 g carbohydrate, 2 g protein, 5 g fat, 18 mg
cholesterol, 127 mg sodium.
