Mixed Vegetable Salad

 Ingredients List

  • 1 sm Head letuce, diced
  • 1 Cucumber, peeled & sliced
  • 1 sm Green papaya, seeded &
  • -- julienned
  • 2 Tomatoes, cut into wedges
  • 4 tb Green onions, chopped
  • 4 tb Cilantro, chopped
  • 4 tb Peanuts, roasted & crushed
  • 2 Red chilies, julienned
  • 1/4 c Lime juice
  • 1/8 c Soy sauce
  • 2 ts Sugar


In a large salad bowl, arrange in layers the lettuce, cucumber, papaya,
tomatoes, onion & cilantro. In a small bow, mix together the peanuts,
chilies, lime juice & soy sauce. Pour over the salad, toss & serve.
