Mock Crawfish Salad

 Ingredients List

  • 3 lb Red snapper fillets
  • 4 Slices lemon
  • 1 sm Onion sliced
  • 1 c Celelry, chopped fine
  • 1 Large carrot, grated
  • 2 qt Water
  • 1 sm Onion minced
  • 3/4 c Chili sauce
  • 2 ts Salt
  • 1/4 ts Pepper
  • 1 c Mayonnaise


Bring water to boil in large kettle. Add red snappes, lemon, sliced onion,
sald, and pepper. Continue to boil for 20 min. Drain fish; cool and flake.

Toss fish with minced onion, celery, carrot, chili sauce, and mayonnaise.
Adjust salt and pepper to taste. Chill overnight.
