Moelleux au chocolat - molten lava cake

Ingredients List
- 6,3 oz/180g good quality chocolate, at least 70% cocoa
- 1â…” tablespoon /25 g unslated butter, plus extra for greasing
- 40g /¼ cup sugar
- 2 large eggs
- ½ orange zest, grated (optional)
- 2 ½ tablespoon flour, plus extra for dusting tins
- a good dash of Grand Marnier (optional)
- whipped cream or ice cream to serve
Directions
Preheat the oven to 200°C/392F.
Butter and flour 4 ramekins, set aside.
Break the chocolate into pieces and melt in a bain marie.
Remove from the heat and set aside to cool slightly while making the rest of the batter.
Cream the butter and sugar together until pale and slightly fluffy.
Beat in one egg at the time then add salt and orange zest
Stir in the flour until just combined, then gently stir in the melted chocolate and liqueur if using. The mixture will thicken quite a bit.
Divide between the ramekins and bake for 8 minutes.
Turn out immediately, dust with cocoa powder and serve with either whipped cream or ice cream.
