Mr Food's Corn Relish- 10/24/95

 Ingredients List

  • 1/2 c Vegetable oil
  • 1/4 c Cider vinegar
  • 1 1/2 ts Fresh lemon juice
  • 1/4 c Chopped parsley -- fresh
  • 2 tb Salt
  • 2 tb Sugar
  • 1/4 ts Dried basil
  • 1/4 ts Cayenne pepper
  • 16 oz Frozen corn -- thawed &
  • Drained
  • 2 lg Tomatoes -- peel/coarsley
  • Chop
  • 1/2 c Green pepper -- chopped
  • 1/2 c Scallion -- chopped

 Directions

In a large bowl, combine the oil, vinegar, lemon juice, parsely, salt,
sugar, basil, and cayenne pepper. Stir in the remaining ingredients. Mix
well, cover and chill for at least 4 hours before serving.
