Ingredients List
- 2/3 c Sugar
- 1 Egg
- 2 tb Vanilla extract
- 2 c All-purpose flour
- 1/2 ts Baking powder
- 1/3 c Strawberry jam
- Or raspberry, or apricot
- Jam
Directions
Preheat the oven to 350 degrees. In a large bowl, blend the butter, sugar,
egg and vanilla. With an electric mixer on low speed, add the flour and
baking powder; mix well. Place the dough on a lightly floured board and
divide it into 4 equal parts. Shape each part into a roll approximately 12
inches long and 3/4 inch thick. Place the rolls on an ungreased cookie
sheet about 4 inches apart and 2 inches from the edge of the pan. Using a
wooden spoon (or knife) handle (or even your finger), make lengthwise
depression in the center of each roll, about 1/4 - 1/3 inch deep. Fill the
depressions with jam and bake for 15-20 minutes or until golden brown.
While still warm, cut diagonally into 3/4 inch slices.
Yield: About 30 bars
