Mr Food's Vegetable Chili

 Ingredients List

  • 1 tb Olive oil
  • 1 lg Onion -- chopped into 1/2
  • Inc
  • 1 Can(28oz)
  • Undrained
  • 2/3 c Picante sauce
  • 1 1/2 ts Chili powder
  • 1 1/2 ts Ground cumin
  • 3/4 ts Salt
  • 2 Cans(16oz)
  • 1 lg Red bell pepper -- chopped
  • 1 lg Zucchini -- cut into chunks
  • 1 md Squash, summer -- cut into
  • Chunks(opt)
  • Tomatoes, canned -- crushed;
  • Red kidney beans -- drained

 Directions

In a large saucepan, heat the oil over medium heat. Saute the onion for 2
to 3 minutes. Add the tomatoes, picante sauce, chili powder, cumin, and
salt. Reduce the heat to low, cover, and simmer for 10 minutes. Add the
remaining ingredients, cover, and simmer for 10 more minutes. Serve with
additional picante sauce, if desired.

Yield: 6 to 8 servings
