Ingredients List
- 1 c Shredded County LineĀ® Sharp
- -Cheddar Cheese
- 1 c Plain yogurt or sour cream
- 1 lg Head iceberg lettuce
- 1 1/2 c Shredded County LineĀ® Old
- -World Swiss Cheese
- 3/4 c Fresh spinach; torn into
- -bite-size pieces
- 3/4 c Cooked brown or white rice;
- -chilled
- 1 cn (11 ounces) Mandarin orange
- -segments
- 3/4 c Chopped pecans
- Dollop of plain yogurt or
- -sour cream for garnish
Directions
Stir together Cheddar cheese and 1 cup yogurt; set aside. Remove inside
portion of lettuce head. Spread 1/2 cup of Cheddar cheese mixture inside
shell. Layer with 3/4 cup Swiss cheese, spinach, rice, 2 cup cheese
mixture, orange segments, 3/4 cup Swiss cheese, remaining cheese mixture,
and pecans. Refrigerate 3 hours or until ready to serve. Cut into wedges.
Carnish with dollop of yogurt or sour cream.
