Nw Bartlett Pear And Smoked Turkey Salad

 Ingredients List

  • 2 c Diced smoked turkey
  • 1 NW Bartlett pear; cored and
  • -cubed
  • 1 c Partially cooked broccoli
  • -flowerets
  • 1/4 c Dried apricots; diced, and
  • -thinly
  • Sliced red onions
  • 2 tb Dried currants and pine
  • -nuts*
  • 4 c Mixed greens; (4 to 6)
  • 1 NW Bartlett pear; cored and
  • -sliced

 Directions

RASPBERRY VINAIGRETTE
2 tb Olive oil
2 tb Raspberry vinegar**
1 ts Honey

Combine turkey, cubed pears, broccoli, apricots, onions, currants, pine
nuts and greens; toss lightly to mix. Garnish each plate with pear slices
and serve with Raspberry Vinaigrette.

Raspberry Vinaigrette: Combine all ingredients; mix well. Salt and pepper
to taste. Makes 1/4 cup.

* Chopped almonds may be substituted.

** Red wine or balsamic vinegar may be substituted.
