Nw Bartlett Pear And Sweet Pepper Salad

Ingredients List
- Bibb lettuce leaves
- 1 Red NW Bartlett pear; cored
- -and sliced
- 1 Yellow NW Bartlett pear;
- -cored and sliced
- 1 sm Green and yellow or red
- -peppers; sliced
- 4 oz Sliced ham; cut into 1-inch
- Strips*
Directions
PARMESAN DRESSING
2 tb Vegetable oil
2 tb Lemon juice
1 tb Water
1 tb Chopped chives
1 ts Dijon-style mustard
1 ts Sugar
1 ts Salt
Pepper to taste
2 tb Parmesan cheese; grated
Arrange lettuce, pears, peppers and ham on serving plates. Drizzle with
Parmesan Dressing just before serving.
*Sliced turkey, chicken, or smoked salmon can be substituted.
Parmesan Dressing: Combine oil and lemon juice, water and chives, mustard
and sugar and salt and pepper; mix well. Stir Parmesan cheese. Makes about
1/3 cup
