Oasis Chutney with Coconut and Dates

Ingredients List
- 2 1/4 lb Pitted dates; chopped (2
- -qts)
- 3/4 c Cocoonut; unsweetened
- 1 c Fresh lemon juice
- 1/2 c Fresh ginger root; grated
- 1 tb Fennel seeds; ground
- 2 ts Ground coriander seeds
- 1 1/2 ts Salt
- 1 c Chopped fresh parsley
Directions
1. Process all the ingredients, except the parsley, in the bowl of a food
processor. If the dates are dry, add small amounts of hot water.
2. Stir in the parsley.

crackers with cream cheese and top with thin layer of this chutney.
