Oatmeal Butterscotch Bars

Ingredients List
- 1¼ cup flour
- 2 cups old fashioned oats
- ½ teaspoon salt
- 1 cup (2 sticks) butter
- ¾ cup butterscotch chips
- 1 cup brown sugar
- 1 egg
- 2 teaspoons vanilla
- GLAZE
- ¼ cup brown sugar
- 2 tablespoons water
- ½ cup butterscotch chips
Directions
Preheat oven to 350° and line a 13x9 pan with foil. Grease the foil and set aside.
In a small bowl, combine flour, oats, and salt. Set aside.
Put the butterscotch chips in a large bowl.
Heat butter in a small saucepan over medium-low heat until nutty brown in color. About 10 minutes. You'll see a definite change- it will go from bubbling and noisy to foaming and quiet. I stir with a whisk regularly to prevent burning.
Pour over butterscotch chips and stir until chips are completely melted and smooth.
Stir in sugar and mix until dissolved.
Add the vanilla and the egg and mix well.
Stir in the flour mixture.
Spread into prepared pan and bake for 18-20 minutes.
FOR THE GLAZE
In a microwavable bowl or measuring cup, mix the water and brown sugar.
Microwave for 30-60 seconds or until it starts to just boil.
Add the butterscotch chips and stir until completely smooth.
Pour over warm bars.
Let fully cool before cutting- at least 2 hours, overnight if possible.
Remove bars using the foil and cut into squares.
