Oatmeal Cinnamon Pumpkin Cookies

Ingredients List
- 1 cup brown sugar
- 1 cup sugar
- 1 cup pumpkin puree
- 1 egg
- 1 tsp. vanilla extract
- 2 cups flour
- 1 1/3 cups oatmeal
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- Optional choices: 3/4 cup semi sweet chocolate chips, 3/4 cup raisins, 1/2 cup chopped nuts
Directions
Mix together the flour, oats, salt, baking soda and cinnamon in a bowl. In a mixing bowl blend together the butter and sugars until fluffy. Add the pumpkin, egg and vanilla extract and mix well. Add the flour mixture and mix. Add your choice of chocolate chips, raisins, nuts or all of them if you like.
Line a large cookie pan with parchment paper. (This really is the best for cooking cookies, they don't stick or brown too fast.) Drop spoonfuls of dough on the pan, I usually will get 12 cookies on one pan, and bake in a preheated 350 degree oven for 14-16 minutes. Cool on a wire rack. This will make about 36-42 cookies depending on the size you make them.
