Oatmeal Fudge Bars Recipe

  • 1 cup {2 sticks} salted butter, softened
  • 2 cups light brown sugar
  • 2 large eggs
  • 3 teaspoons vanilla
  • 1/3 cup milk {I use 1%, but any kind will work}
  • 2 1/2 cups white whole wheat flour
  • 3 cups old-fashioned oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • For the filling:
  • 1/3 cup salted butter
  • 1 {14 oz.} can nonfat sweetened condensed milk
  • 1 {12 oz.} bag dark chocolate chips
  • 1 teaspoon vanilla extract

 Directions

Preheat the oven to 350 F. Spray a 13x9x2 inch pan with cooking spray.
In a large mixing bowl, cream together the softened butter and the brown sugar, then add the eggs, vanilla and milk and stir to mix everything together well. Add the oats, baking soda and salt and stir some more to mix it all up together.
Pour about 2/3 of this oatmeal mixture into the prepared baking pan and press it down to make an even layer over the bottom.
In a small/medium mixing bowl, add the butter and microwave for about 2 minutes on low, covered, to melt or soften. Then add the sweetened condensed milk, chocolate chips and vanilla and stir. Microwave on high for 1 minute, stir and stir and stir, then microwave another minute and stir again. If everything is still not melted, microwave another 30 seconds and stir a lot more to finish up the melting. You should end up with a nice shiny looking mixture that resembles thick cake batter. Pour this lovely chocolatey mixture over the oatmeal layer in the pan and use a spatula to spread it out evenly across the pan.
Drop the remaining oatmeal mixture on top in bits so that most of the top is covered, It's ok if some of the fudge mixture shows a bit.
Bake at 350 F. for about 25 minutes or until nicely golden brown on top.
Remove from heat and let cool completely to let the fudge layer set before cutting into bars.
