Oatmeal Snickerdoodle Cinnamon Cookies

- 1½ cups Quaker® Old Fashioned Rolled Oats
- 1 cup unsalted butter, softened to room temperature
- 1â…“ cups sugar
- 1 large egg
- 2 tsp vanilla extract
- 1½ cups all-purpose flour 2 tsp cream of tartar
- 1 tsp baking soda
- 1 tsp cinnamon
- Topping
- 1 Tbsp Quaker® Old Fashioned Rolled Oats
- ¼ cup sugar
- 1 tsp cinnamon
Directions
1. Line 3 large cookie sheets with parchment paper.
2. Cream the butter and sugar until light and fluffy.
3. Mix in the egg and vanilla.
4. In a medium bowl, whisk together the flour, oats, cream of tartar, baking soda, salt, and cinnamon.
5. Slowly blend the dry ingredients into the butter mixture.
6. Chill the dough for 30-45 minutes.
7. Preheat oven to 350º.
8. In a small bowl, mix the topping ingredients.
9. Roll 1 rounded Tbsp. of dough into a ball and roll the balls into the cinnamon-sugar-oat topping.
10. Bake cookies about 10-12 minutes.
11. Cool for about 10 minutes and ENJOY!
