Okra, Corn, and Tomatoes

 Ingredients List

  • 1 tbsp butter (or 1 tablespoon margarine)
  • 1 tbsp vegetable oil
  • 12 ozs okra (fresh, cut into thin rounds)
  • 2 corn kernels (ears, cut off)
  • 2 tomatoes (chopped)
  • salt
  • ground pepper (fresh)

 Directions

1.Heat butter and oil in a medium-size saucepan.
2.Add okra; cook, stirring occasionally, until okra no longer forms "strings."
3.Stir in corn and tomatoes.
4.Simmer, covered, over low heat until vegetables are tender, stirring occasionally.
5.Season with salt and pepper.
