One-Dish Italian Chicken and Rice

Ingredients List
- 1 lb boneless, skinless chicken breasts, cubed
- Salt, pepper, garlic powder, onion powder and italian seasoning to season
- 3 tablespoons oil (I used coconut oil but olive oil will work, too)
- 1 cup tomatoes, diced
- 2 cups fresh spinach leaves
- 2 cups chicken broth
- 1 cup jasmine rice
- 1/2 mozzarella cheese
Directions
Season the chicken with salt, pepper, garlic powder, onion powder and italian seasoning. Heat the oil in a large skillet on high heat. Brown the chicken for 1-2 minutes on each side and lower the heat to medium high.
Add in the tomatoes and spinach and sauté for 3-5 minutes or until the spinach turns dark and wilted.
Add in the chicken broth and rice and bring to a boil. Once it's boiling, cover the skillet and lower the heat to low. Cook for 10-13 minutes or until rice is cooked.
Add in the mozzarella cheese and stir. Serve immediately.
