One Pot Vegetable Pasta

Ingredients List
- 1 lb. spaghetti or linguini
- 4 1/3 cups water
- 10 oz. mushrooms, sliced
- 3 cups spinach leaves
- 1 cup frozen peas
- 2 cloves garlic, thinly sliced
- 1/4 tsp. red pepper flakes
- 1 tsp. dried italian seasoning
- salt/freshly ground pepper
- 1/2 cup heavy cream, cashew cream, or milk
- 1/2 cup parmesan cheese, vegan or regular
Directions
Place all ingredients except for the cream and cheese in a large saucepan.
Bring to a boil then reduce heat to a simmer for cook for 10 minutes until the pasta is al dente, stirring occasionally.
Once pasta is cooked, remove from heat and stir in a pinch of salt, freshly ground pepper, milk/cream, and cheese.
