Orange Rice #1

 Ingredients List

  • 2 c Diced celery and leaves
  • 6 tb Chopped onion
  • 1/2 c Melted butter
  • 2 c Uncooked rice
  • 1 ts Salt
  • 2 1/2 c Boiling water
  • 1 1/2 c Orange juice
  • 1/4 c Grated orange rind


Saute celery and onion in butter until tender. Set aside. Stir rice and
salt into boiling water; cover and simmer 15-17 minutes. Add orange juice,
rind and sauteed vegetables. Cover, cook 5 minutes or until tender.
