Orzo with Spinach and Feta Cheese

 Ingredients List

  • 1 c Orzo pasta
  • 1 1/4 ts Olive oil
  • 3/4 md Onion; minced
  • 7 oz Frozen chopped spinach;
  • -thawed and well drained
  • 2 tb Feta cheese; plus 2 tsp.
  • -,crumbled
  • Freshly ground black pepper;
  • -to taste


Cook the orzo according to package directions. Drain. Heat the oil in a
skillet over medium high heat. Add the onion and saut”š for 5 minutes. Add
the spinach and saut”š for 4 more minutes. Toss the onion spinach mixture
with the hot orzo. Add the feta cheese and ground pepper and toss well.
Serve immediately.
