Orzo with Spinach and Feta Cheese

Ingredients List
- 1 c Orzo pasta
- 1 1/4 ts Olive oil
- 3/4 md Onion; minced
- 7 oz Frozen chopped spinach;
- -thawed and well drained
- 2 tb Feta cheese; plus 2 tsp.
- -,crumbled
- Freshly ground black pepper;
- -to taste
Directions
Cook the orzo according to package directions. Drain. Heat the oil in a
skillet over medium high heat. Add the onion and saut”š for 5 minutes. Add
the spinach and saut”š for 4 more minutes. Toss the onion spinach mixture
with the hot orzo. Add the feta cheese and ground pepper and toss well.
Serve immediately.
