Oshkinigikwe (Tomato Stew)

 Ingredients List

  • 4 lb Miniature Mexican tomatoes,
  • -- washed & deseeded
  • 12 Shallots, chopped
  • 1/3 c Water
  • 1/3 c Cucumber, minced
  • 1 ts Salt
  • 1/4 ts Black pepper
  • 1/3 c Corn flour


Place tomatoes in a large saucepan, add the shallots &
water & simmer for 30 minutes, stirring gently on
occasion. Add the cucumbers & salt & pepper, simmer
for 10 minutes, stirring, until the tomatoes break up.
Quickly add the corn flour, 1 tablespoon at a time,
stirring slowly. Simmer for 5 minutes & serve.
