Oven Roasted Root Vegetables

 Ingredients List

  • 3-4 large beets, peeled and chopped
  • 3-4 large carrots, peeled and chopped
  • 2 large potatoes, washed and chopped
  • 2 tbsp olive oil
  • 1 tsp course salt
  • 1/2 tsp ground black pepper
  • 2 sprigs of fresh rosemary
  • Parsley for garnish (optional)

 Directions

1. Preheat oven to 400F

2. Toss all ingredients in a bowl until vegetables are covered evenly by oil.

3. Place vegetables on a parchment lined baking sheet and cook for 45 minutes tossing them every 15 minutes.

4. Turn oven to broil and cook for 10-15 minutes or until brown.

5. Remove from oven and discard rosemary sprigs.

6. Serve with your favourite main dish.
