Paleo Chocolate Banana Muffins

  • 3 small brown bananas
  • 2 tablespoons coconut oil
  • 1/3 cup cashew milk (or almond)
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 1/3 cup cacao powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder

 Directions

Preheat oven to 350° and line a muffin tin with liners (parchment if my favorite)
In a large bowl, mash bananas and add coconut oil, milk, eggs, and vanilla. Stir to combine.
Add almond flour, coconut flour, cacao powder, salt, cinnamon, and baking powder.
Mix until fully incorporated and no dry pockets remain.
Pour into liners and bake 20-25 minutes or until toothpick comes out clean.
