Paleo Curry Meatballs

Ingredients List
- Large skillet with a lid
- Mixing bowl
- Measuring cups
- Measuring spoons
- Cutting board
- Sharp knife
- Ingredients for Meatballs:
- 1 lb. organic ground beef
- 2 eggs (include yolk)
- ½ finely chopped medium yellow onion
- 1 finely chopped garlic clove
- 2/3 cup almond flour
- 3 tablespoons curry powder
- ½ teaspoon ground ginger
- ½ teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- 1/8 teaspoon cinnamon
- 2 tablespoons coconut oil (for frying)
- Ingredients for Sauce:
- 1 can of full fat coconut milk (must be canned!)
- 1 cup of organic chicken broth
- ½ finely chopped medium yellow onion
- 2-3 tablespoons curry powder
- 1 teaspoon of ginger
- ½ teaspoon of cayenne pepper
Directions
1. In a mixing bowl, combine meatball ingredients (except for the coconut oil, as it will be used to fry meatballs) well.
2. Using your meatball mixture, create medium sized (1×1 in.) meatballs to have them prepared before we heat the skillet.
3. Place skillet under medium heat and add coconut oil. Once coconut oil melts, add in all your meatballs (I mad them all fit in my skillet; my skillet is not that big”¦hopefully you have a bigger one!) and your finely chopped onion (ingredient from the sauce).
4. Let meatballs brown on one side for about 4-5 minutes, and then turn around to brown on the other side for another 4-5 minutes.
5. While you wait for the meatballs to brown, combine your sauce ingredients together and set aside.
6. Once both sides have been browned, add in your sauce and cover skillet with a lid. Let it simmer for about 5 minutes, until meatballs have cooked through and sauce thickens.
7. Serve hot and enjoy
