Pan fried spicy chicken wingslets

 Ingredients List

  • 1/2 a cup of Oil
  • 700g of Chicken winglets(depending on how many individuals you have to feed)
  • 1-2 teaspoon Salt
  • 1/2 teaspoon Turmeric
  • 2 tablespoon of Ginger Paste
  • 3-4 large Onion sliced( keep a few of these Onion rings to mix in later)
  • 3 large Tomatoes with 2 finely chopped (1 for garnishing)
  • 2-3 Green chillies sliced(optional)
  • 3-4 tablespoons of Chilli flecks
  • 1/2 cup of Tomato Ketchup( if you can use the chilli sauce, even better)

 Directions

Marinading the winglets is a less that five-minute process as I promised you. Clean and wash the chicken winglets, make sure to drain any excess water.
Add the winglets in a large bowl, add 1/2 teaspoon of Salt and a 1/2 teaspoon of Turmeric, mix then set aside.
Use a large, frying pan, on medium heat, add the oil, before the oil reaches the smoking point add the marinated chicken, at this point try to keep the fire on low as the chicken hits the oil there’ll be splattering that might cause burns.
Mix the winglets so they fry, not completely but just enough that you see the edges turn golden brown.
Once the chicken wings are semi fried, add the Ginger paste, Onions, green chillies and the finely chopped Tomatoes, Mix all ingredients well with the chicken, this should take you less than two minutes.
Add the chilli flecks and give it a quick toss, don’t let the chilli flecks burn.
Now, pour in the Ketchup.
At this point it’s a matter of letting the gravy thicken and coat the winglets, you might want to leave a little gravy or let the gravy completely coat the chicken wings as it cooks.
Make sure to taste to make sure the flavors are balanced,especially salt, if you prefer a bit of sweetness add a teaspoon of honey.
Once the chicken winglets are cooked, take it off the fire, add a few Onion rings and mix.
