Parmesan Mashed Potatoes Sour Cream

 Ingredients List

  • 2½ lbs Russet potatoes, peeled and cut into ½" pieces
  • 1 tsp. salt
  • 4 oz. (1/2 brick) cream cheese
  • 4 Tbsp. butter
  • ½ c. sour cream
  • ½ c. half and half
  • ½ c. shredded Parmesan cheese, plus more for topping
  • salt and pepper to taste (I add about ½ tsp each)

 Directions

1. In a sauce pan, add the peeled and cut potatoes and cover with water until all potatoes are covered. Add the 1 tsp. salt. Bring to a boil, and simmer for 20 minutes or until potatoes are fork-tender. Drain the water from the potatoes.

2. To the hot potatoes, add the butter, cream cheese, sour cream, and half and half. Mash with potato masher until smooth. Stir in the Parmesan cheese will still hot. Top with reserved cheese and serve right away.
