  • 1 1/2 pounds boneless, skinless chicken breast
  • 1/2 cup bread crumbs (2 slices approved bread, processed)
  • 1/4 cup grated soy or fat-free Parmesan cheese
  • 1 teaspoon dried basil
  • salt and pepper to taste
  • 2 eggs
  • 1 1/2 tablespoon Zero Drag 100% MCT Oil or zero calorie spray

Parmesan Chicken
Cook Time: 15 min

Ingredients

1 1/2 pounds boneless, skinless chicken breast
1/2 cup bread crumbs (2 slices approved bread, processed)
1/4 cup grated soy or fat-free Parmesan cheese
1 teaspoon dried basil
salt and pepper to taste
2 eggs
1 1/2 tablespoon Zero Drag 100% MCT Oil or zero calorie spray

Directions

Flatten chicken to 1/4" thickness with heavy mallet.
In shallow bowl, combine bread crumbs, cheese, basil and spices.
In another bowl, beat the eggs.
Dip chicken into egg, then coat with crumb mixture.
In large skillet, heat Zero Drag 100% MCT Oil over medium heat.
Brown chicken in Zero Drag 100% MCT Oil for 3-5 minutes on each side, or until juices run clear.
