Pasta with Tomatoes and Black Beans

 Ingredients List

  • 1 c Green onions -- sliced 1/8"
  • Thick
  • 28 oz Tomatoes, canned -- diced
  • 15 oz Black beans -- drained
  • 1 cn Artichoke hearts -- cut in
  • Quarters
  • 1 lb Pasta -- cooked as directed
  • 1 ds Salt
  • 1 ds Red pepper flakes
  • 3/4 ts Oregano
  • Freshly ground pepper
  • 2 ts Olive oil
  • 2 Cloves garlic -- minced


Cook pasta as directed.

Meanwhile, heat olive oil in the bottom of a medium saucepot. Add green
onions and saute for 5 minutes. Add seasonings and stir for 1 minute. Add
tomatoes; cover and simmer for 10 minutes. Add black beans, combine and
simmer for 5 minutes. Add artichoke hearts. Adjust seasonings and toss
with pasta.
