Pea Salad Recipe - Y'all This is Good Stuff!

 Ingredients List

  • 1 (15-ounce) can very young early peas (Lesueur or frozen)
  • ΒΌ cup finely chopped onions
  • 2 hard boiled eggs, chopped
  • Salt and freshly ground pepper
  • 2 to 3 tablespoons mayonnaise
  • Chopped pimento, optional


1. In a colander, drain the peas very well.

2. Place drained peas in a medium bowl.

3. Add the onions, chopped eggs, and mayonnaise,

4. Add pimento if using.

5. Season to taste with salt and pepper.

6. Toss to combine and coat peas with mayo goodness.
