Peach and Mango Chicken

 Ingredients List

  • 2 1/2 -3 lb fryer chicken
  • 1/4 c Butter
  • 1 c Diced mango
  • 1/2 c Diced peaches
  • 3 Strips lemon rind
  • 1 1/4 c CHICKEN STOCK
  • 1 tb Lemon juice
  • 1/2 c Heavy cream
  • Salt & pepper


Preheat oven to 350. Fry chicken in butter until brown on all sides.
Add mango, peaches, rind & stock. Cover & bake 1 hour. Remove chicken
from pan & keep warm. Remove rind. Add juice & cream. Season to
taste. Bring sauce to simmer & reduce until thick. Pour over chicken
& serve.
