Peaches in Honey Vanilla Syrup

 Ingredients List

  • 1/4 c Water
  • 1/4 c Honey
  • 1 2" Vanilla Bean
  • 4 lg Peaches ( or nectarines),
  • Pitted, pealed,and thickly
  • Sliced
  • 1 tb Lemon juice
  • 1 pt Vanilla nonfat yogurt

 Directions

Bring water, honey, and vanilla bean to boil; reduce heat and simmer 5
minutes. Add peaches; raise heat to bring mixture back to a fast
simmer. Simmer until peahes are just softened, 10-15 minutes,
depending on ripeness. Remove from heat; stir in lemon juice.
Refrigerate at least 2 hours. Serve over frozen yogurt.
