Peachy Scotch Pie

 Ingredients List

  • 2/3 c Brown sugar
  • 3 tb Flour
  • 1/2 ts Salt
  • 1/4 c Butter
  • 1 tb Lemon juice
  • 1/4 ts Vanilla extract or almond
  • -extract
  • 1 cn Peach slices (1 lb. 13 oz.);
  • -drained

 Directions

In saucepan, combine sugar, flour, salt, butter, lemon juice and extract;
mix well. Bring to rolling boil, over medium heat, stirring constantly.
Boil 1 minute, stir in peach slices. Pour into 9 inch pie shell. Top with
lattice crust. Bake at 400 degrees for 40 to 45 minutes.
